The smell is recognizable anywhere, but most familiar in the subconscious mind. It’s a distinct smell that catches your attention and awakens the senses from the never-ending depths of sleep. Almost by instinct, children of all ages roll out of bed and aimlessly follow the scent towards the kitchen. The family gathers and it is time for breakfast.

This vision of having a traditional, “home cooked” meal is exactly what Bill Baumhauer and Don Lamb had in mind when they decided to form E&I Holdings Inc. and acquire the rights to The Egg & I Restaurant in 2005. After taking notice of the under-served breakfast and lunch market in Colorado, Baumhauer and Lamb expanded the concept to over 100 locations across 20 states with approximately $1,000,000 in annual sales per location.

E&I Holdings is committed to providing a comfortable “home away from home” environment while still remaining competitive in the restaurant industry. Over the years, the company re-engineered the customizable menu by eliminating low-selling items, perfecting traditional favorites (Eggs Benedict and Biscuits & Gravy), introducing entrees to the new “Smarter Choices” category (Chicken Apple Sausage Scramble at 485 calories), and creating a selection of unique entrees (Parisian Benedict, Santa Fe Huevos, and the Vera Cruz Chicken & Avocado Omelette) for guests who dare to try something new.

Since The Egg & I Restaurant concepts are only open during the morning and early afternoon, they’ve made it nearly impossible for anyone to come up with an excuse for skipping breakfast. Most restaurants are equipped with free Wi-Fi and a private meeting room for those pesky business meetings, eventful family gatherings, or a much needed study group session. In addition to the meeting room, the company prefers that each 3,000 to 4,000 sq. ft. location seats 120 to 160 guests with both indoor and outdoor seating available.

Sadly, Bill Baumhauer passed away in August 2014, but his vision remains in the hearts of each employee and through the day-to-day operations of the company he helped create. E&I Holdings plans to continue expanding its “just like home” breakfast and lunch concept nationally projecting 24 new outlets (22 franchised, 2 company owned) in Fiscal Year 2015, starting with eight locations opening soon in CO, FL, MO, NC, and TX.
